1. Meats

Korean BBQ is all about the meat, and you can use a variety of cuts, from beef to pork, chicken, and even seafood. Some of the most popular types of meat for Korean BBQ are:

  • 1 tablespoon minced ginger
  • 2 tablespoons rice vinegar or mirin
  • 1 teaspoon sesame seeds
  • Black pepper to taste

3. Banchan (Side Dishes)

A Korean BBQ meal isn’t complete without banchan, which are small side dishes served with the main course. Common banchan include:

  • Kimchi (fermented spicy cabbage)
  • Pickled radish or cucumbers
  • Steamed or stir-fried vegetables (spinach, bean sprouts, zucchini)
  • Potato salad
  • Seaweed salad
  • Jeon (Korean pancakes)

4. Sauces

Korean BBQ is often accompanied by dipping sauces, including:

  • Ssamjang: A spicy, savory sauce made from gochujang (chili paste) and doenjang (fermented soybean paste).
  • Gochujang: Straight chili paste for those who love extra heat.
  • Sesame oil dip: A simple mix of sesame oil, salt, and pepper.

5. Vegetables and Wraps

  • Lettuce leaves (for wrapping the meat, known as “ssam”)

  • Zucchini or sliced carrots

Step-by-Step Instructions for Korean BBQ at Home

Step 1: Prepare the Meat and Marinades

  • Beef Short Ribs (Galbi): If you’re using short ribs, it’s best to get them LA-style cut (cross-sectioned) for quicker cooking. If the ribs are thicker, marinate them longer to tenderize the meat.
  • Bulgogi: Slice beef sirloin or ribeye very thinly. A tip is to place the meat in the freezer for about 30 minutes before slicing to get even, thin cuts.
  • Pork Belly (Samgyeopsal): You don’t need to marinate pork belly; it’s typically cooked plain and dipped in sesame oil or ssamjang at the table.
  • Chicken: Use thighs or breasts, cut into bite-sized pieces. Marinate in either the soy sauce or spicy gochujang marinade.
  • Seafood: Shrimp, squid, or other seafood should be lightly seasoned with salt, pepper, and sesame oil, or marinated in a simple soy-based sauce.

Marinating Time:

  • For beef and pork: Let the meat marinate for at least 30 minutes, but for the best flavor, marinate for 2–3 hours or even overnight in the fridge.
  • For chicken: Marinate for at least 30 minutes, but 1–2 hours is ideal.

Step 2: Set Up the Grill

  • Indoor Grilling: Use an electric tabletop grill or a grill pan on your stove. If you don’t have these, a cast-iron skillet works well.
  • Outdoor Grilling: A charcoal grill gives the best smoky flavor, but a gas grill works too. Preheat your grill to medium-high heat.

Ensure the grill or pan is hot before adding the meat to achieve a nice sear.

Step 3: Cook the Meat

  • Beef and Pork: Grill thin cuts of meat for 2–3 minutes on each side, or until nicely browned and cooked through.
  • Chicken: Cook for about 5–6 minutes on each side, depending on the thickness of the pieces.
  • Seafood: Shrimp and squid cook quickly. Grill for about 1–2 minutes per side or until they are opaque and cooked through.

  • Wrap the meat: Place a slice of meat in a lettuce leaf, along with a bit of rice, a slice of garlic, green chili, and a dab of ssamjang or gochujang. Wrap it up and eat it in one bite (this is known as “ssam”).
  • Dip the meat: Alternatively, simply dip the grilled meat into a sesame oil dipping sauce or ssamjang.

  2. Slice the Meat Thinly: Thin slices of meat cook more quickly and absorb more of the marinade’s flavors. If you’re slicing the meat yourself, freezing it slightly beforehand will help you get even, thin slices.
  3. Preheat the Grill or Pan: Make sure your grill or pan is hot before adding the meat. This helps the meat sear beautifully and lock in its juices.
  4. Prepare Banchan in Advance: Banchan can be made ahead of time and served cold or at room temperature. They add variety to your meal and balance the rich flavors of the grilled meat.
  5. Make it Interactive: Korean BBQ is meant to be social and interactive. Grill the meats at the table, let everyone cook their portions, and enjoy wrapping and dipping together.
